Tomato & Cucumber Summer Salad

TOMATO & CUCUMBER SUMMER SALAD INGREDIENTS: 1 pint grape tomatoes, cut in half lengthwise 1 medium cucumber, peeled (striped)and cubed, leave seeds in 1 cup feta cheese, crumbled 1/2 cup kalamata olives, pitted and whole 1 1/2 tablespoon oregano flakes 2 tablespoons red wine vinaigrette, to coat (prepared in advance - 3 part ext. virgin olive oil to 1 part red wine vinegar) salt and pepper to taste DIRECTIONS: Combine the grape tomatoes, cucumber, feta cheese and kalamata olives in a large bowl. Add the red wine vinaigrette, oregano flakes, salt and pepper and gently toss until mixed.

Taste and adjust seasoning as desired. Serve and enjoy! TO STORE: Cover and refrigerate leftovers for up to one day. TO PREPARE IN ADVANCE: The tomatoes, cucumber, cheese and olives can be prepared up to two days in advance and stored separately in the refrigerator. Dress with oregano, vinaigrette and seasonings just before serving.
